Ingredients

    2 1/2 Lb Lean beef stewing meat (1 inch chunks)
    3 one pound bags frozen vegetables for stew
    2 Tbsp all purpose flour
    1 14 1/2 oz can diced tomatoes with roasted garlic
    1 14 1/12 ounce can beef broth
    1 bay leaf
    2 Tbsp chopped fresh parsley

Directions

Combine beef and stew vegetables in a 4 - 6 quart slow cooker; stir in flour and toss to coat. Add tomatoes, broth, and bay leaf; cover and cook until beef is tender, 5 -6 hours on high, 8 - 9 hours on low. Add green beans during the last 30 minutes. Remove and discard bay leaf; sprinkle with parsley before serving over 1 cup of stew over 1 cup of brown rice (not included in calorie totals)
