Ingredients

1 lb. lean roast beef, shredded (2 cups or more)
8 whole wheat tortillas, 8-inch
1/2 cup canola oil
4 oz. light cream cheese
1 1/2 cup light sour cream
1 cup shredded cheddar cheese
2 cups shredded monterey jack cheese
1/4 tsp cumin
1/4 tsp salt
10 oz. can enchilada sauce
Directions
Slow cook and shred beef, if necessary. Preheat oven to 350 F. Heat oil in large skillet and dip each tortilla in oil on both sides and set aside. Mix cream cheese and sour cream until smooth; add beef, cheddar cheese, half of monterey jack cheese, cumin, and salt. Mix well and place approximately 1/2 cup down the center of each tortilla. Roll tortillas and place seam-side down in 13x9 pan. Bake for 15 minutes; add enchilada sauce and bake for 15 more minutes. Top with remaining monterey jack cheese and bake for 2-3 minutes more until cheese is melted. Makes 8 filling tortillas.
