o 2 lbs chicken breasts, cooked and shredded
o 1 (12 ounce) bottle hot sauce
o 12 ounces of kefir yogurt
o 1 package silken tofu
o 1 packet ranch seasoning
o 2/3 cup chopped celery (optional)
o 2 cups reduced fat shredded sharp cheddar cheese
Directions
1. Preheat oven to 350.
2. In a large bowl, mix shredded chicken, celery and cheese.
3. In a blender combine yogurt, tofu and ranch seasoning until smooth. Stir in bottle of hot sauce ( use less to make it milder). Pour blended mixture into bowl with chicken mixture. Stir to mix well.
4. Pour into a 13" x 9" baking pan. Bake uncovered for 40 minutes or until bubbly, do not let it brown. Allow to stand for 10 minutes. Serve warm with celery or other veggies and crackers or baked chips.
