Introduction

A lower fat, lower sugar variation of a few other apple/carrot/flax recipes on here. A lower fat, lower sugar variation of a few other apple/carrot/flax recipes on here.
Number of Servings: 24

Ingredients

    1.5 cups whole wheat flour
    0.75 cup ground flax
    0.75 cup oat bran
    1/2 cup sugar
    1 tsp baking soda
    1 tsp salt
    2 tsp baking powder
    1 tsp cinnamon
    1 tsp allspice
    3/4 cup nonfat milk
    2 large eggs
    1 tsp vanilla
    2 tbsp canola oil
    2 cups shredded carrots
    2 cups shredded apples (about 5 small Spartans)

Directions

Preheat oven to 350*F.
Mix all dry ingredients.
Mix all wet ingredients.
Fold together until JUST combined.
Fold in carroge and apples.
Fill muffin cups 2/3 full.
Bake for 15-20min.

Raisins can be added also.
