Muffins with fruit and yogurt in the mix. Muffins with fruit and yogurt in the mix.
Number of Servings: 16


    2 C. Flour
    1/2 C. Sugar
    1 Tbsp. Baking Powder
    1/2 tsp. Salt
    1/2 tsp. Ground cinnamon
    2 egg whites
    1 C. Strawberry blended Yogurt
    1/4 C. Buttermilk
    1/4 C. applesauce \
    1/2 tsp. Almond extract
    1 C. Frozen raspberries, blackberries and blueberries


Preheat oven to 400 degrees. Coat muffin tin with cooking spray.

Combine dry ingredients in large bowl.

Whisk together eggs, yogurt, buttermilk, applesauce (or butter) and almond extract in a medium bowl.

Fold the egg mixture into the flour mixture, until just combined. Gently fold in the frozen berries.

Spoon into muffin pan. Bake for 15-20 minutes.

Makes 12-16.
