Introduction

I devised this recipe to increase my fiber consumption. If you like the taste of pumpkin, you might like this. It also has the advantage of filling you up, so it is a good snack between meals. Ingredients

    1/2 cup canned or fresh pumpkin
    1 tsp splenda (or other sugar substitute)
    1 TBSP wheat germ
    spices to taste (I used a small sprinkling of traditional ones: cloves, cinnamon, nutmeg, and ginger
    3 TBSP cool whip light, thawed


Directions

Stir together pumpkin, splenda, wheat germ and spices. Then gently fold in cool whip. Enjoy! Makes one serving (approximately 3/4 cup).
