Ingredients

    4 Cups Shelled Edamame
    2 Tbl Minced Parsley or Cilantro
    2 Tbl Fresh Lime or Lemon Juice
    1 Tbl Olive Oil
    1/2 tsp Black Pepper
    1/8 tsp Salt
    1/2 Cup Parmesan

Directions

Cook Edamame in boiling water to cover 3 minutes. Drain in plunge in cold water and drain.

Combine Cilantro and next 4 ingredients in a medium bowl, stirring with a whisk. Add edamame and toss well. Sprinkle with cheese
