Introduction

Ingredients

    Chicken Breast, no skin, 4 unit (yield from 1 lb ready-to-cook
    Chick Peas, 1.25 cup (1 can)
    Beans, black, 1.25 cup (1 can)
    Yellow Sweet Corn, Canned, 1.25 cup (1 can)
    Beans, pinto, 1.25 cup (1 can)
    Tomato Sauce, 1 cup (1 can)

Directions

Break out the crock pot and:
Add 3 or 4 frozen chicken breasts
Add 1 can of black beans
Add 1 can of pinto beans
Add 1 can of corn
Add chopped green peppers and onions
Add 1 can of corn
Add 1 can of tomato sauce
Add 1 can of chick peas (optional - I did this time to see how it tasted)
Season with Salt or Mrs. Dash, chile powder, etc.
Let simmer for a few hours - I threw the ingredients in at night and let it go until the morning. I then pulled out the chicken breasts and shredded each breast by hand. It should be very tender, but be warned it is hot! You can let it cook for an hour or two more if you have time, otherwise, just pour 1 cup in a bowl and take it for lunch.
