Introduction

Ingredients

    1 lb box of pasta (I use Pipette shape to hold all the yummy cheesy-ness)
    1/2 cup all-purpose flour
    1/4 cup light butter spread
    1/4 cup unsalted butter (or use an additional 1/4 cup of light butter spread or margarine)
    1/2 tsp salt
    2 2/3 cup skim milk
    2 cup cubed 2% Velveeta
    1 cup of Orange Puree (1 medium sweet potato, 3 medium to large carrots peeled and diced into thick chunks - in a medium pot, cover carrots and potatoes with cold water and boil for about 20 min. until soft, partially drain water and put them in food processor or blender until smooth)

    Bread crumbs for top

Directions

This recipe is adapted from recipe in Vita Mix cookbook. You use the vita mix to make the cheese sauce.

preheat oven to 350F and spray large casserole dish with vegetable cooking spray and add pasta to the dish
in the vita mix place butter/butter spread, flour, salt and milk into the VitaMix container in order listed and secure lid. Turn on variable 1 and then quickly increase speed to high, blend for 3-4 minutes or until heavy steam escapes from vented lid.
Add cheese through the lid plug opening and blend for 1 minute. then add in orange puree and blend another minute.
pour cheese mixture over past and mix thoroughly. Cover with seasoned bread crumbs and bake until bubbly and top is golden brown, about 30 minutes.
