Introduction
I love the combination of the mustard and canola mayonnaise (much lower in fat than regular). It adds a nice flavor really gives the panko coating something to stick to. I hope you like it too. If you don't like spicy, leave out the cayenne & use regular yellow mustard or even a honey mustard. I love the combination of the mustard and canola mayonnaise (much lower in fat than regular). Ingredients

8 boneless, skinless chicken thighs
3 tbsp canola mayonnaise
2 tbsp spicy brown mustard
2 tbsp Newman's Light Balsamic Dressing
2 tsp Worcestershire sauce
2 cloves minced garlic (or 2 tsp bottled minced garlic)
1 cup panko bread crumbs
4 tbsp shredded parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp Italian herb seasoning
Directions
8 Servings (1 thigh each)
Preheat oven to 400 degrees.
Mix mayonnaise, mustard, dressing, Worcestershire sauce, & garlic in a small bowl (see note). Baste chicken with this mixture.
NOTE: I do like to toss the chicken & the above mixture in a large baggie & let it rest in the refrigerator for an hour or two. If you like your dishes extra hot, put the cayenne in the "wet" mixture & marinate the chicken overnight.
Mix the remaining ingredients in a bowl (or use the shake n bake method by using a baggie). Dredge chicken in the mixture. Place coated chicken on a cookie sheet lined with parchment paper. Sprinkle the leftover "dry" mix over the chicken & bake for about 30 to 40 minutes.
