Introduction

I have loved Chai since I first tasted it, but it was always a guilty pleasure- too much sugar, too much sweets... but now- its not an everyday treat still, but this recipe for chai tastes better than any packet, pouch, or ready-mixed blend, and even better than most chais at cafes, IMHO. and at just about 100 Calories, using honey and not sugar, it is a treat I don't have to feel guilty about. Ingredients

    Hot water, your favorite blend of masala chai loose leaf tea blend (usually found in tea shops or the loose tea section of a grocery store), one tablespoon honey (local is best for health benifits, but any honey will do), 2 ounces 1% milk (this really is best- the lower fat your milk the stiffer the froth will be)

Directions

Heat up your water (I use an electric kettle, you can use any method you choose- I heat up enough to fill a large mug)

measure 1 tspn tea blend into a tea ball, cup infuser, or filter pouch. I prefer the infuser since it allows the tea to float int he water more freely), put tea into cup and cover. Let steep for 3-5 minutes.

While this is happening, measure 2 ounces milk into a microwave safe cup. Use a milk frother (usually found in the gadgets and utensils section in the groery store- bonjour make a good one) to froth up your milk. Milk should be cold. 2 ouces froths into easily over a cup of froth, and there will be milk at the bottom. don't worry about it.

microwave frothed milk for approx 30 seconds, or just till froth looks like it is starting to rise higher. froth should now be very stiff, with a bit of milk (up to an ounce usually) at the bottom unfrothed.

remove cover and tea ball/infuser/filter from water, and stir in 1 tblspn honey. using a spon to keep froth out yet, add milk from botto of froth. stirr gently. now add as much or little froth as you like. a sprinkle of cinnamon or nutmeg to finish over the top, and you are done.

sit back, and enjoy your 100 calorie treat.
