Introduction

Delicious and moist Chocolate muffins. Delicious and moist Chocolate muffins.
Number of Servings: 12

Ingredients

    Whole Wheat flour 1 1/2 cup
    Quinoa Flakes 2/3 cup
    Flax meal 8 Tbl
    Cocoa Powder 1/2 cup
    Baking Soda 1 tsp
    Baking Powder 1tsp
    salt 1/2 tsp
    Almond milk 1/4 cup
    Egg
    Egg white
    Honey 1/4 cup
    Carrots shredded 1/2 cup
    Applesauce 1/4 cup
    Dark chocolate mini chips 1/4 cup
    blended plums 1/4 cup

Directions

Mix dry ingredients
Blend up plums with a little juice
Mix wet ingredients
Mix all together gently
Bake in twelve regular size muffin cups, lightly sprayed with olive oil. 350. 20 minutes or so.
Less than 200 calories each and totally delicious!
