Ingredients

    Egg, fresh, 2 large (remove)
    *Liquid Egg White, 9 tbsp (remove)
    Fat free half and half, .25 cup (remove)
    Bacon grease, 1 tsp (remove)
    *Green Pepper, Fresh, Whole (large), .5 serving (remove)
    Onions, raw, .33 cup, chopped (remove)
    Cheddar Cheese, 2 oz (remove)
    Mushrooms, fresh, 3 small (remove)
    Tomato, grape (3oz = appro 12 tomatoes), 2 oz (remove)
    Cilantro, raw, 1 tbsp (remove)
    Thyme, ground, .5 tsp (remove)

Directions

saute onion and pepper in 1 tsp bacon grease until onions are almost clear. Wisk fresh eggs with eggwhites in a bowl. Add remaining ingredients except cheese to egg mixture.

Spray pan with PAM and pre-heat. Pour egg mixture onto hot griddle. Sprinke cheese on top of egg mixture. Cook over medium heat. When eggs have almost completely set and cheese melted, carefully fold in half.
