Introduction
my home made pasta sauce I make it and can it so its on hand when I need it. Also good to freeze (i freeze it in 2, and 4 cup measures so its easy to pull out and defrost. I also do a few 1 c measures (freeze in a ziplock sandwich bag flat to save room and it will defrost faster) for pizza sauce . my home made pasta sauce I make it and can it so its on hand when I need it. Ingredients

2 large cans (100 fl oz) diced Plum Tomatoes - no salt added
2 large cans (106 fl oz) Italian Plum Tomoatoes - peeled with basil .
1 13 fl oz can Tomato Paste
10 onions - raw, and chopped
1/2 c sugar
6 TBSP basil (dried)
1 1/3 TB parsley
2 2/3 Tbsp kosher salt
10.5 Tbsp oregano (dried)
10 Tbsp minced garlic
2 tbsp olive oil
Directions
run whole tomatoes thru food processor until smooth, set aside.
In large stock pot, add EVOO, garlic and onion, cook until onion is soft. Add the rest of the spices, then all the tomatoes and paste. Bring to a boil - then reduce heat and simmer for 30 min.
Makes: 50cups, nutritional info is for 1 cup servings
To spice it up - add 1-2 tsp red pepper chili flakes.
