Delicious GF and Egg-free Banana Cake. Delicious GF and Egg-free Banana Cake.

    1/2 cup Olivani Lite (olive oil spread)
    1/2 cup brown sugar
    1/2 cup applesauce
    1 tsp baking powder
    3 bananas
    1 tsp vanilla extract
    1 tsp baking soda
    1/4 cup milk
    1 1/2 cups gluten-free self-raising flour


Turn oven to 180C.
Cream sugar, vanilla and Olivani. Mix applesauce and baking powder. Add to creamed mixture, beat well. Mash bananas and add to mixture. Dissolve baking soda in milk. Add flour and milk alternately.
Bake for 25 or until browned.

  • My recipe which I have tweaked over the years may not be as healthy but it is full of flavour. I add nutmeg, cinnamon, 2 more bananas, raisins soaked in rum and wine and, I don't ever use those fat-free, gluten free ingredients.If you are doing a dessert use the real thing and discipline yourself. - 3/13/11

    I am baking for family members with allergies. By the way there are no "fat-free" ingredients in this recipe only a spread made from olive oil rather than dairy and applesauce and baking powder instead of eggs. Thanks for your comment :)
