Introduction

Ingredients

    1 medium Sweet Potato peeled and sliced 1/8 inch thick1 cup fresh spinach, cut in pieces1 tbsp olive oil1 medium onion diced3 whole eggs5 egg whitespepper to taste

Directions

Steam sweet potatoes approx 10 - 12 minutes or until tender. During last 2 minutes add spinach and green peppers, and let spinach wilt.
Meanwhile, add oil to a large nonstick skillet and saute onions over medium heat until soft.
In large bowl, mix eggs, egg whites and black pepper to taste.
Add potatoes, spinach, green peppers and onions to egg mixture, toss to coat.
Pour egg mixture in skillet on cook med-high heat, until edges are firm, then reduce to med-low and cook.
After 5 - 7 minutes, run rubber spatula around edges to loosen.
Put large plate over the pan and flip pan so omlett is upside-down on the plate. Slide it back into pan to cook other side, approx 5 minutes.
Serves 4
