Ingredients

    2 Chicken Breast
    1 cup canned black beans
    1/2 cup diced onion
    1/2 cup diced bell pepper (red or green)
    5 diced mushrooms
    1 diced roma tomato (about 1/4 - 1/2 cup)
    1/4 of a fresh squeezed lemon (juice only)
    2 minced garlic cloves (or powder if in a rush)
    3/4 C. Ketchup or V8 (calories are for ketchup)
    2 TBLSP Mustard (dry or wet)
    2 TBLSP Maple Syrup
    2 TBLSP Worcestire Sauce
    2 TBLSP Chili Powder (for med. spice)
    1 TBLSP Cayenna Pepper (include with chili powder for a real spicy kick)

Directions

Place raw chicken in crockpot. Add the beans and all diced vegetables. Top with spices and sauces. Let cook in cropckpot on low for 6-8 hours. Serve over a slice of bread, noodles or rice.
Makes about (5) 3/4 cup servings.
