Ingredients

    1 tbsps olive oil
    1 large onion, halved pole-to-pole and sliced into half moons
    2 cups red globe grapes or red seedless grapes
    4 medium red or Yukon Gold potatoes, peeled and cut into chunks
    Fresh thyme, rosemary and oregano, to taste
    1 tsp red pepper flakes
    1/2 tsp salt

Directions

Preheat oven to 425 degrees. Toss all ingredients together in a large bowl, and add to non-stick roasting pan or jelly-roll pan. Cook until potatoes are tender and vegetables are starting to caramelize, about 45 minutes. Turn on broiler and broil for 5-10 minutes. Makes 3-4 servings.
