Introduction

This version uses garlic mashed potatoes flavored with mustard, corned beef (either leftover or deli-style) kraut, swiss and caraway. Serve with a big slice of buttered pumpernickle bread on the side - it's just like a reuben sandwich only a lot lighter on calories!

Ingredients

    Hot Water 3 cup
    Milk, nonfat, 1 cup
    Land O Lakes, Light Butter, Salted, 1/4 cup
    Yellow Mustard, 1 Tbsp
    Betty Crocker Instant Garlic Mashed Potatoes, 7 oz box
    6 oz corned beef, sliced into 1/2" pieces
    1 15oz can Sauerkraut, drained & rinsed
    Shredded Swiss Cheese, 2 cup
    Caraway (seed), 1 tbsp

Directions

Spray oil an 8x8x2 inch baking dish, preheat oven to 350.

Bring water, milk & butter to a boil in 3 quart saucepan. Remove from heat and stir in MUSTARD
Stir in potatoes until just moistened and set aside until all liquid is absorbed, about a minute. Then whip with fork until smooth.

Spread 1.5 Cup of the potatoes in bottom of the pan. Top with chopped corned beef, then sauerkraut. Spoon the rest of the potatoes on top and spread them out over the top. Top this with the swiss cheese and sprinkle with caraway seeds.

Bake in 350 oven for 20 minutes or until cheese in golden brown .

Makes 8 hearty servings.
