Introduction

This hearty veggie chili can be eaten vegetarian or add chicken for even more protein! This hearty veggie chili can be eaten vegetarian or add chicken for even more protein!

Ingredients

    1 green pepper, chopped
    1 red pepper, chopped
    1 large onion, chopped
    2 jalapenos, chopped
    2 15 oz cans black beans
    2 14 oz cans diced tomatoes
    16 oz grilled chicken - cut into 1" pieces
    1 T canola oil
    1 T chili powder
    1 t cumin
    1/2 t salt
    1 1/2 C water
    1 C frozen corn


Directions

In 4 quart saucepan, heat the oil over medium heat. Cook the onion, peppers, garlic and chiles 5-7 minutes until tender. Stir in beans, tomatoes, water and spices. rudeuce heat, cover and simmer for 30 minutes, stirring occasionally. Stir in corn and chicken, cook 5 minutes longer (uncovered).

May top with cheese, cilantro, sour cream - but these calories are not included in the total.
