Ingredients

    Lasagna Noodles 4 oz
    Tomato Sauce 15 oz
    Part Skim Ricotta Cheese 8 oz
    Extra Virgin Olive Oil 1 tbsp
    1 egg
    Part Skim Mozzarella Cheese 4 oz
    Parmesan Cheese 3 oz
    Ground Turkey 1 lb

Directions

Preheat Oven to 350 degrees. Brown ground turkey in oil until done. Warm tomato sauce in separate pan. Cook Lasagna noodles (you can use no-boil noodles, but they are not figured in Nutrition facts) until they are soft with a little crunch (they will continue to cook in the oven. Spread a small amount of the ricotta cheese on the noodles. Layer in a baking pan (I use a bread pan size for this recipe) with a small amount of sauce to line the bottom of pan. Then do noodles with Ricotta, Meat, sauce, grated cheeses (reserve about an oz of cheese for topping). Continue layering until ingredients are gone, or pan is about an inch from the top. Cook covered @ 350 degrees for 45 minutes. Pull from oven and top with remaining cheese. Continue cooking at 400 degrees uncovered for about 15 minutes or until cheese is melted and browned. I serve this in 4 oz portions and freeze leftovers for lunches during the week. I like it with garlic bread that I make at home (a little healthier that way) which is really yummy and helps the small amount to stick with you better. Just watch the butter!
