    1/2 cup frozen corn
    1 package Jiffy corn muffin mix
    1 egg
    1/3 cup skim milk
    1 cup cheddar cheese
    1 jalapeno pepper


Preheat oven to 400 degrees. Grease muffin cups. Mix all ingredients together. Batter will be lumpy. Fill muffin cups half full. Bake 15-20 minutes or until golden brown.

  • I'm pretty sure there is an error in the calculations for the jiffy mix in this recipe. I believe that only 1 serving is accounted for when it should be 6 since the whole box is being used which would pretty much double all the nutritional values. - 2/12/14
