Ingredients

    1 can no fat, low salt chicken broth
    1 small head cauliflower
    bunch watercress
    2 T smart balance margarine
    1 small onion
    1 1/2 tsp salt
    ground pepper

Directions

Melt margarine in large sauce pan, add onion and saute until translucent. Add broth, salt, pepper and cauliflower to pan, bring to a boil and cook until cauliflower is very tender. Remove from heat, add watercress, large stems removed.

In small batches, process soup in food processor or blender.

Add salt to taste upon serving.
