Ingredients

2 boxes sugar-free lime Jello
3 tablespoons lemon or lime juice
1 teaspoon vanilla
2 individual-size packets of non-calorie sweetener
2 8-ounce cartons of sugar-free Cool Whip
4 large rectangular graham crackers, crushed
Directions
Mix lime Jello with 2 cups boiling water until completely dissolved. Stir in lemon juice, vanilla, and sweetener. Add 1 cup cold water. Chill until thickened but still stirable; about 1 hour.
Add Cool Whip to thickened Jello mixture and whip until combined. Spread in a 9 x 13" dish and chill until set, at least 3 hours. Top with crushed graham crackers.
Serving Size: Makes 12 3-inch squares.
