Introduction

Sometimes I need to use up vegetables. This recipe will warm the cockles of your heart. Sometimes I need to use up vegetables. This recipe will warm the cockles of your heart.
Number of Servings: 8

Ingredients

    1-pound lean beef stew meat
    1-14.5 ounce can stewed tomatoes
    About 8 ounces baby carrots
    1/2 onion, chopped
    1-large potato, chopped
    1-8 ounce package sliced mushrooms
    1 can corn 11-12 ounces
    Water
    Salt and Pepper to taste


Directions

This recipe requires a 2 quart or larger crockpot.
For better color, you can brown the beef in a skillet before adding it to the crockpot. I just throw it in. Break up the stewed tomatoes with a fork. Add all the vegetables and enough water to cover everything.
Cook on high heat for 3-4 hours, or on low heat for 7-8 hours.
Before serving, season to taste with salt and pepper.
Makes 8 one-cup servings.
