Ingredients

1 cup water
6 tbs butter, cut up
1 tsp salt
Dash Cayenne pepper
1 cup of all purpose flour

Directions
Makes 48 gougeres.
Heat oven to 400. Line to baking sheets with parchment paper.
Bring water, butter, salt and cayenne pepper to a boil in medium saucepan over med-high heat. Boil until butter is completely melted. Remove from heat, stir in flour (should be consistency of bread dough). Return to heat, cook 1-2 min, stirring constant;y, until mixture comes together and stats to pull away from the sides of pan and leaves a film on the bottom of pan while being stirred. Remove from heat and cool 5 min.
Stir in eggs one at a time. Stir in cheese until melted. Stir in olives. Drop dough by rounded teaspoonfuls onto baking sheet. Bake one sheet at a time, 20-25 minutes or until golden brown. Prick each puff with tip of knife to allow trapped steam to escape, bake two minutes. Serve warm or at room temperature.
