Ingredients

    1 cup Riceland Extra Long Grain Natural Brown Rice
    3 cups of water
    Olive Oil, 1 tbsp
    Broccoli, fresh, 2 cup, chopped
    Chopped Leeks, 1 cup
    1 small onion chopped
    Minced garlic, 4 tsp
    Salt, 1 tsp
    Pepper, red or cayenne, 1/2 tsp
    Thyme, ground, 1 tsp
    Cheddar Cheese, Fat Free, 1 cup

Directions

Sautee onions, leeks, and garlic in the olive oil, for about 5 minutes. Add broccoli, red pepper, thyme and lightly sautee for another minute. Add water and bring to a low boil. Cover with a tight-fitting lid and simmer for 45 minutes. Once cooked, mix 3/4 cup of cheddar cheese. Pour rice mixture into a prepared casserole (with non stick spray). Add the remaining 1/4 cup cheese on the top and bake for 20 minutes in preheated 350 degree (F) oven.
