Introduction
This is an updated lower calorie version of an old family Southern favorite. If you are fortunate enough to have a country ham you must use some of the little bits that are trimmed off to flavor your greens. If you don't have country ham then any ham will do. Ingredients

Country or Cured Ham, 1 cup
Trader Joe's Southern Greens Blend, 8 cups (or any greens or combinations)
Onions, raw, 1 large chopped
Garlic, 3 cloves minced
Dried Hot Red Pepper Flakes .(large pinch or to taste)
Beans, white, 2 cups (1 can drained and rinsed)
Chicken Broth - (2 cups)
Ham Fat Rendered or Olive Oil, 1 tbsp
Salt and Pepper to taste
Directions
1. Sauté onion and garlic in ham fat or olive oil till solf.
2. Add greens and sauté until softened and cooked down.
3. Add salt, pepper and pepper flakes
4. Add beans and chicken broth
5. Cook on medium for about 10 minutes until softened but not mushy.
Serving Size: Makes 6 1 1/2 cups sevings
