Introduction

Ingredients

    2 tbsp olive oil
    1 medium onion finely chopped
    2 cloves garlic finely chopped
    1 regular Zucchini chopped
    1 medium yellow or red pepper chopped
    3 or 4 medium mushrooms finely chopped
    125g chicken breast chopped (pre cooked)
    2 tbsp Elmea double
    1 tbsp white wine
    250g wholewheat pasta
    Salt, pepper and dried herbs to taste

Directions

Put one tbsp of olive oil in a frying pan and add onion and garlic. Sautee on a medium heat for about 4 minutes. In another pan add the other tbsp of olive oil and chopped chicken. Heat the chicken through thoroughly. After the onion and garlic have sauteed, add the zucchini, pepper, mushrooms and wine. At this point, place the dried pasta in a pan of salted boiling water and add the chicken to the pan containing the vegetables and continue to cook on a medium heat until the pasta is ready. Just as the pasta is ready for draining, add the elmlea to the chicken and veg mix and mix through thoroughly whislt on the heat. Drain pasta, serve with the chicken and veg mix.
