Introduction

This cold pasta salad is a perfect spring lunch or side dish. This cold pasta salad is a perfect spring lunch or side dish.
Number of Servings: 6

Ingredients

    6 ounces farfalle (bowtie) pasta
    half bag of frozen peas
    1/4 cup reduced fat feta cheese
    juice of 1 lemon
    1/2 cup EVOO
    1 t dried oregano
    salt to taste

Directions

Cook the pasta according to package instructions. Add the peas to boiling water for last minute of pasta cooking.

Meanwhile, whisk together the lemon juice, olive oil, salt and oregano.

Drain the pasta and peas. Let cool slightly. Crumble the feta and poor the vinaigrette over. Mix together and enjoy!
