Introduction

Ingredients

    1.82lbs ground chuck browned and drained of fat
    1 med onion chopped
    1 1/2 tsp coriander
    2 tsp chili powder
    1 bay leaf
    black pepper
    1-28oz can of diced tomatoes
    1/2 large head of cabbage
    1 large carrot chopped
    32oz organic beef broth (low sodium)
    1 cup dry whole wheat quinoa ( i used hodgeson mill brand)
    4 cups water

Directions

brown beef and onion in large pot with black pepper, coriander,mrs dash, garlic powder and chili powder.

drain excess fat. add all other ingredients and simmer on med for 30 mins or until cabbage is tender

Serving Size: makes 16-1 cup servings
