Introduction

Delicious and adaptable recipe that can be altered in many ways. I use two 15 oz. cans of beans, but you could easily use one. Lower calories by decreasing to one avocado. We usually add pepper jack cheese or chopped jalapenos for more kick. I use a whole grain, low carb tortilla while my family prefers a regular flour tortilla. If you have left overs it is easy to make more quesadillas, or when mixed with greens; it makes a tasty salad. It makes about 8, 1/2 cup servings. I have a large family, but you can easily make this dish smaller. Delicious and adaptable recipe that can be altered in many ways. I use two 15 oz. cans of beans, but you could easily use one. Ingredients

    2 firm, ripe avocados, diced
3 scallions or green onions, diced
    1 c. monterey jack cheese
1 c. black beans, drained and rinsed
    1 c. ripe tomatoes, chopped
    juice of 2 fresh limes
    1 c. sweet corn (I use frozen)
    2 cloves garlic, minced
    2 t. cumin

We like to top with lettuce, salsa and sour cream!

Directions

Mix all ingredients except cheese and let marinate for at least 10 minutes.
Arrange avocado mixture on half of tortilla and top with cheese; leaving a half inch border around the edges. Fold each tortilla over to make a half circle.
On hot, dry griddle (I have used oil or spray), cook on both sides until golden brown.Cut in half to make two wedges. Serve with lettuce, salsa or sour cream, if desired.
Makes approximately 8, 1/2 cup servings. I have a big family!
