Introduction

The chicken version of the beefed up favorite. It's full of delicious mushrooms and onions, ready to serve over a bed of rice or noodles. The chicken version of the beefed up favorite. It's full of delicious mushrooms and onions, ready to serve over a bed of rice or noodles.

Ingredients

    16 oz chicken breast, cooked
    16 oz mushrooms, sliced
    2 medium onions, diced
    1 T butter
    1/2 cup light sour cream
    1 can cream of mushroom soup
    1/2 cup skim milk

Directions

Melt butter in large skillet. Saute mushrooms and onions until tender. Add chicken, sour cream, soup and milk. Mix well. Simmer over med-low heat until bubbly. Salt and pepper to taste. Also great with a dash of ground red pepper or hot sauce. Serve over rice or hot egg noodles.

Makes 6 servings.

    This was delicious! I used 1 T of olive oil and 1 T light butter instead of 1T butter. Also added 1 tsp of minced garlic (jar). Served it over No Yolk Noodles. Sprinkled a little bit of parmesan on top. Hubby and daughter loved it also. Yum!!!! - 3/30/08
