Introduction

I started with the McCormick's Recipe Idea spice cards, but it was too spicy for my husband. Number of Servings: 6

Ingredients

    1 tsp Paprika
    1 tsp Minced Garlic
    1 tsp Thyme Leaves
    1/4 tsp Coarse Ground Black Pepper
    1 tsp Salt
    1/4 C flour
    1 Lb Boneless Skinless Chicken Breast cut into 1 " cubes
    2 Tbs Olive Oil
    1/2 Large Red Bell Pepper cut into thin strips
    1/2 Large yellow Bell Pepper cut into thin strips
    1/2 Large Red Onion cut into thin wedges
    1 can 14.5 oz Diced Tomatoes, undrained
    1/2 Cup water

Directions

Dice the chicken, set aside. Mix flour and all of the spices, dredge the chicken pieces in the flour. Cook chicken in hot oil in large skillet about 5 minutes, then add all of the vegetables and cook covered, stirring frequently, abt 5 minutes more. Add tomatoes and water. Cover and cook another 5 minutes. Remove lid and cook until liquid evaporates some and thickens. Serve over rice.
