Ingredients

1 pound Dreamfield Rotini
1 pound bacon
1 large onion, chopped
6 cloves garlic, minced
2 T red wine
24-26 oz jar spaghetti sauce
3/4 c half-and-half
1 c blue cheese crumbles
1/2 t sugar
salt & pepper to taste
1 cup baby spinach leaves
Directions
Cook pasta according to package directions and drain. Keep warm.
Chop up and saute the bacon in a deep skillet over medium-high heat. Once the bacon starts getting brown, add the onion and continue to saute until onion is softened & bacon is cooked. Remove grease (I use a turkey baster).
Deglaze the pan with wine, scraping up any brown bits. Then add the spaghetti sauce. Cover and simmer on medium-low for 10-15 minutes.
Add the sugar, half-and-half, blue cheese, salt and pepper to taste. Adjust seasonings as needed and combine well. Add cooked pasta to sauce. At the last minute, toss in the spinach, combine, and serve.
