Introduction

This is a fast and easy lentil soup. It is low in calories and carbs and high in protein.

For Vegan version omit chicken boullion and substitute several cups of water with vegetable stock and add salt to taste.

Ingredients

    2 cups dried lentils (one package)
    8-10 cups water
    1 medium onion, peeled and chopped
    2 stalks celery including top peeled and, chopped
    2 large carrots, peeled and chopped
    2 cups baby spinach, whole
    1 Tbs chicken boullion granules (I use Maggi brand)

Directions

Place lentils in large pot. Add 8 cups water. Bring to a boil. Turn heat down to low,. Let simmer 30 minutes stirring occasionally. Add 2 cups of water to pot. Peel and Chop Onion, Celery and Carrots. Add to soup. Simmer for 30 minutes . Add chicken boullion granules and 2 cups fresh whole baby spinach. Simmer for10 minutes or until lentils are tender. Add more water if you desire thinner soup. Turn off heat and let cool slightly,Serve warm.


Serving Size: Makes 4 large 2 cup servings
