Ingredients

    3 C Spinach, fresh, chopped
    1/4 C Cucumber (with peel), .diced
    1/4 C Green Peppers (bell peppers),diced
    1/4 C Red Onion, diced
    1 small Tomato, seeded
    8 Black Olives, sliced
    1/4 C Mozarella Cheese (or feta)
    1/2 T Balsamic Vinegar
    1/2 T Extra Virgin Olive Oil

    Kangaroo Pita Pocket Bread, 3 serving
    Athenos Roasted Garlic Hummus, 3 tbsp

Directions

toss veggies with cheese and dressing

Spread 1 T hummus on pita
fill with salad

Serving Size: makes 3-4 half pitas
