Introduction

This is a good recipe to be used as a base. It can be altered however you would like. I added coconut to mine and it is included in this recipe as i needed it for the nutritional info. Ingredients

    1 3/4 C all purpose flour
    1 Tbsp baking powder
    1/4 tsp salt
    1/2 c butter, softned
    1 C white sugar
    2 eggs
    1 tsp. vanilla
    1C milk
    1C SHredded coconut


Directions

1.Preheat oven 350 degrees and grease muffin tins.
2.Stir flour, baking powder and salt together. Set aside.
3.Beat butter and sugar with an electric mixer until smooth. Add 1 egg and allow it to blend into the butter mixture. Beat vanilla and milk into the mixture and then add the 2nd egg. Beat all together until mixed.
4.Add the flour mix to the wet ingredients until just mixed. (do not over mix).
5.Divide dough into prepared pan. Bake about 20 minutes. (we are 4500 above sea level.)

Serving Size: Original recipe called for 12, i got 18 muffins out of this recipe however.
