Ingredients

    1 - 16 oz box orzo patas by Barilla
    1 - cup canned mushrooms
    4 oz. - canned/jarred roasted red peppers
    1 - cup scallions sliced thin
    1/2 cup jarred artichoke hearts (seasoned hot is best)
    4 - TBS garlic flavored red wine vinegar
    8 - TBS grape seed oil
    2 - cups fresh spinach
    1 - tsp sesame oil
    Garlic poweder, salt, pepper, cayenne, curry poweder to taste

Directions

Cooks pasta according to directions on box. Then drain and rinse with cold water.

While the pasta is cooking, chop and slice the turkey, scallions, artichoke hearts and roasted red peppers. Toss well in a large bowl and add drained canned mushrooms.

Once pasta is cool add to other ingredients and toss to mix well. Add oils, vinegar and spices to taste. Toss again, refrigerate to chill and enjoy.

Serving Size: Makes approx 10 - 1 cup servings
