Ingredients
-
1 pound ground sirloin
1 onion, chopped
1 green pepper, chopped
2 stalks of celery, chopped
3 cloves minced garlic
1 cup dry brown rice
3 cups beef broth (bouillon)
1 teaspoon paprika
1/2 teaspoon red pepper flakes (or hot sauce)
1 1/2 tablespoons soy sauce or worcestershire
Tips
Use grated cauliflower instead of rice for a veggie boost and low carb alternative. Reduce liquid by half.
Directions
In a medium saucepan, cook the ground beef. Drain off all fat and rinse the meat in hot water and set aside. Add the vegetables and garlic to the pot and cook until tender. Add the meat, rice, paprika, red pepper flakes, broth and the soy sauce. Bring the mixture to a boil. Reduce the heat to very low and put a good lid on the pot. Simmer for about an hour. If you think you need it, then add more water while it cooks, to keep things moist.

flavors were good, followed exactly and it took over 90 min to cook, some rice was still not done, but the rest was getting mushy - 4/28/12

I have had the veggies come out a little soggy too. To prevent this, just add them in during the last 30 mins or so. I've never had the rice not cook. Make sure you keep it covered the entire hour, except for when you add the vegetables.
