Introduction

Low fat, low sodium salsa. Low fat, low sodium salsa.
Number of Servings: 30

Ingredients

    1 28oz can diced tomatoes, no salt added
    2 lg fresh tomatoes, diced
    3/4 c. chopped red or Spanish onion
    3 tbsp minced fresh jalapeno peppers (approx 2 peppers)
    1 tsp garlic powder
    1 small can tomato paste
    3 tbsp light olive oil
    3 tbsp cilantro, chopped
    1 tsp salt (more or less to taste)

Directions

Cut up all ingredients and add to food processor, mix for 10-15 seconds. Keeps in fridge in a sealed container for up to 7 days.

Makes about 7.5-8 cups in total. Serving size is approx. 1/4 cup and makes about 30 servings.
