Introduction
When I first read this recipe in "Penzey's Spice" catalog I thought the strawberry was an odd choice. But after I made the first loaf, I was hooked!! Ingredients

2.5 cups sliced strawberries
1 cup sugar - divided
1/2 cup Fiber One Cereal - ground
1 1/2 cup Whole Wheat Flour
1 cup Enriched Flour
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
2 tsp Cinnamon
4 eggs
1 tsp Vanilla Extract
1/2 cup Applesauce
1/2 cup melted Unsalted Butter
Directions
Preheat oven to 350" Spray 2 loaf pans with nonstick spray and lightly flour.
Place strawberries in bowl and pour 1/2 cup sugar and mix well. Set aside.
Combine sugar, cereal, flours, baking powder, baking soda, salt and cinnamon.
Beat eggs in seperate bowl until frothy. Add vanilla, applesauce and melted butter *** make sure butter is just melted, not too hot *** and mix well. Fold in strawberry mixture.
Combine both wet and dry ingredients and divide evenly amoung loaf pans. Bake at 350' for 45-55 minutes until toothpick inserted comes out clean. Allow to cool on wire rack for 10 minutes before removing. 2 loaves, 10 slices each.
