    2.5 lb. Chuck Roast
    4 teaspoons minced garlic
    1 lb. baby red potatoes
    8 oz. Baby carrots
    2 tablespoons olive oil


Preheat oven to 350 degrees. Season meat with salt, pepper, and garlic. Add oil to pan, brown meat on both sides. Place meat in a deep pan and add water so it covers bottom of pan. Cover with foil. Bake for 2 hours. Remove from oven, add potatoes and carrots. Cover. Cook an additional 30 minutes or until carrots and potatoes are tender.

  • I made this without the vegetables but the meat was delicious and tender. Roasts haven't been my best dish. Thanks for the easy recipe. - 1/22/08
