Introduction

I love the Tuscan Soup (Zuppa Toscana) at Olive Garden. After doing a little Internet searching I came up with my own healthy version of it. I love the Tuscan Soup (Zuppa Toscana) at Olive Garden. After doing a little Internet searching I came up with my own healthy version of it.
Number of Servings: 9

Ingredients

    2 pkg. Jennie O Sweet Italian Turkey Sausage
    1 - 3 lb. bag small red potatoes (halved and sliced thin)
    2 med. yellow onions (chopped)
    2 tbs. minced garlic
    1 Pint Land O Lakes Fat Free Half & Half
    1 sm bunch kale (stems removed, chopped)

Directions

Remove casings from Turkey Sausage and brown in a soup pot.
Add onions and garlic.
Continue cooking until onion is tender.
Add chicken broth and bring to a boil.
Add potatoes and simmer until potatoes are done, about 16 minutes.
Add kale and fat free half & half and heat through.
Add salt and pepper to taste.

Serving Size: Fills 9 - 16 oz. small round zip lock containers
