Ingredients

    Salmon Cakes:
    1 (14.75 ounce) can salmon, drained and flaked
    2 eggs, beaten
    1/4 cup of green onions, diced
    1/2 teaspoon ground black pepper
    1/2 teaspoon Old Bay Seasoning
    1/2 teaspoon salt
    1/2 teaspoon garlic powder
    1/2 teaspoon cayenne pepper
    A heavy squirt of lemon juice
    2 tablespoons clarified butter

    Blackening Spice:
    Italian seasoning
    Garlic Powder
    Ground Pepper

Directions

Serving Size: makes 7 servings

1. Pick through the salmon and remove any bones. In a mixing bowl, beat the eggs and add the diced green onion, salmon and seasoning. Mix thoroughly.

2. Shape into 2 ounce patties (about 7 patties). Heat butter in a large skillet over medium heat. Fry each patty for 5 to 7 minutes on one side or until crispy and golden brown. Sprinkle unfried side with Blackening Spice mixture and fry for 5 to 7 minutes or until a the spices form a crust.
