Introduction

Nice creamy peach flavor. Great way to stay on track when you crave ice cream. No ice cream maker required. I froze it in ice cup trays for portion control and quicker freezing. There is nothing like the fresh peach flavor. You can probably substitute other fruit for the fresh peaches.

Possible substitutes I haven't tried yet are using
Lowfat yogurt for Buttermilk
Splenda for sugar
Other fruit for peaches

Number of Servings: 12

Ingredients

    2 cups lowfat buttermilk ( maybe yogurt would work too)
    1cup Sugar
    2-3 cups diced fresh peaches (save juice from peaches)
    1 tbs vanilla extract
    2 tbs Lemon juice
    1 tsp Lemon zest

Directions

Heat Lemon juice, reserved peach juice and sugar in a pan until sugar melts. Cool down to room temp.

In a blender puree the diced peaches and slowly add buttermilk. Add and blend room temp sugar mixture.

Pour into 2 and a half ice cube trays and freeze overnight.

about 3-4 cubes per serving
