Light healthy pasta dish. Light healthy pasta dish.
Number of Servings: 4

Ingredients

    2 large zucchini, julienned
    1 can diced organic tomatoes
    1 T minced fresh garlic
    1/4 cup minced fresh basil
    1/4 cup minced fresh parsley
    1/4 cup white wine
    salt
    pepper
    1 T Extra virgin olive oil
    8 oz. linguini fini or other thin pasta

Directions

julienne zuchini. mince the garlic, basil and parsley separately. boil water for pasta.

while pasta is cooking, add oil to large skillet. heat to medium high heat and add garlic. saute for about 4 min. add zucchini, basil, parsley and tomatoes. simmer for 5 min.

drain pasta. add to skillet and toss well. serve with parmesan cheese if desired.

    This was good! I omitted the wine (we didn't have any on hand), and I threw in some sauteed chicken at the end. Yummy and easy! - 9/13/11
