Introduction

Ingredients
-
3.5 cups water
.25 tsp salt
1 cup polenta
2 tbl olive oil
4 cups well chopped Broccoli - no thicker than 1/4 inch thick - stalks included
Directions
-Bring water and salt to a boil in a medium saucepan.
-Add polenta in a slow, steady stream, stirring with a whisk
-Add the broccoli and olive oil and lower heat to low
-Cover and let simmer for 15 minutes, stirring often
-Turn off the heat, cover and let sit for 10 more minutes, stirring occasionally
-Grease a 6-8 medium muffin tin* lightly with olive oil and spoon in mixture into the cups meeting the top with the mixture (be sure to not go over the top).
-Place in fridge for 1 hour
-After 1 hour heat a broiler and grease a baking sheet with olive oil spray
-Place muffin shaped mixture on baking sheet top side down
-Put in broiler for 7 minutes and viola!
I put a bit of butter alternative on top for some added flavor :-)
*I had a 6 muffin tin so I placed remaining mixture into another container (also greased with olive oil) and placed in fridge for same amount of time. Once chilled I sliced this and placed on baking sheet following above directions. This can also be done if you do not have a muffin tin or if you'd like to have a different shape to your polenta.
