Ingredients

3 c all purpose flour
1 T baking powder
.5 t baking soda
.25 salt
4 egg whites
2 c mashed banana
1.5 c sugar
2 T canola oil
2 pkg chocolate fudge instant pudding mix
1 c applesauce
.5 c skim milk
1 t cinnamon
1.5 c chopped walnuts
1 c mini semi sweet chocolate chips
Directions
1. Preheat oven to 350 degrees. Spray muffin tins with cooking spray. (I used cupcake papers instead)
2. In large bowl, stir together flour, baking powder, soda, salt, cinnamon and pudding mix.
3. In medium bowl, beat egg whites slightly. Stir in bananas, sugar, oil, applesauce, milk. Add to flour mixture, stirring just until combined. Stir in nuts and chips. Fill muffin cups 2/3 full.
4. Bake for about 20-25 minutes, or until tops are springy or a toothpick comes out clean. Remove muffins from pan and cool on racks.
Serving Size: Makes 30 muffins
