Introduction

This is my favorite macaroni and cheese dish. Baked it comes out cripsy on the top and cheesy in the middle. Very Yummy!! Try it!! Feel free to use lower fat butters & cheeses, whole grain pasta, ect, or make it full fat with full fat everything. Just count it in, Great as a meal or just a side dish at the holidays!! Ingredients

    1 pkg. (16oz) cooked elbow macaroni
    1/4 cup butter or margarine..smart balance works well
    2 cup cubed velveeta (use regular or low fat)
    2 cup kraft shredded cheddar cheese (use regular or low fat)
    1 egg
    2.5 cups 2% or lower milk
    Paprika to sprinkle

    optional: 2 cups chopped red and green peppers

Directions

1.) Cook 1 pkg 16oz elbow macaroni as directed on package. Cut up 1/4 cup (1/2 stick) buter or margarine into small pieces and place in bottom of 13x9 in baking dish.

2.) Drain macaroni, place half of the macaroni over butter in baking dish, sprinkle with 1 cup EACH velveeta and kraft cheeses. Beat 1 egg and 2.5 cups wilk with wire whisk until well blended. pour half egg mixture over ingredients in baking dish. repeat layers of macaroni, cheeses, and egg mixture. sprinkle with paprika.

3.) bake at 350 for 15 minute. remove from oven, stir until well blended, bake an additional 15 min or until golden brown. makes 16 1/2 cup servings.
